How to cut ribeye steak

Chuck-Eye Steak

This steak is basically a ribeye. In fact, it’s often called the “poor man’s ribeye.” It comes from the same part of the cow as the prize ribeye, but it’s cut thinner so butchers can get an extra piece to sell. Cook chuck-eye steaks just like you would a real ribeye.

The answer is that very few of us own a band saw that is clean enough to cut through the bone and muscle of a Bone-In Rib Eye Primal. You can however ask the butcher to cut the Bone-In Rib Eye for you and then package the steaks for the freezer yourself at home.

Cutting Steak Incorrectly Can Ruin a Meal

With any steak cut, you should always slice against the grain, which means against the direction that the muscle fibers run.

To identify which direction the grain of the meat is running, look for the parallel lines of muscle fiber running down the meat, and slice perpendicular to them. For those cuts that have fibers running in different directions, it’s vital to “read the meat” and adjust the direction in which you’re slicing.

TL;DR: Yes, it’s fine to cut meats before cooking. Another option to pan cooking You might consider using a sous vide cooker (or water bath with a good thermometer) to thoroughly cook the meat before searing.

Slice Against the Grain at an Angle

When your beef is cooked, run your knife perpendicular to the grain of the steak, or else you’ll have a piece of meat that’s tougher than jerky. You also want to cut at a diagonal, as this will help your steak retain most of its juices (it also looks better).

Turn about 1 minute prior to the halfway point. For the perfect medium-rare thick-cut bone-in ribeye steak, grill for 18-20 minutes for a 2-inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F. Rest your steaks for 5 minutes before serving, covering lightly with foil.

The Two-Hour Rule

Once you’ve reached the two-hour time limit, bacteria that is naturally found on raw meat begins to grow to levels that are unsafe for consumption. Do not refrigerate or cook meat that sits out for more than two hours; throw it away.

It’s perfectly safe to cook it, as long as you don’t plan to eat it. The exception is if the water was at or below fridge temperature to begin with. When food temperature enters the “danger zone” of 40-140F/4-60C, there’s a lag time of 2 hours before bacteria go into exponential replication.

Answer: You can safely leave cooked steak out at room temperature for two hours — or one hour if the temperature is above 90 degrees Fahrenheit — says the United States Department of Agriculture. Cooked steak that has been sitting out for longer than 2 hours (or 1 hour above 90° F) should be discarded.

Beef, veal, lamb and pork roasts, steaks and chops may be kept 3 to 5 days. After cooking, meat, poultry and seafood can be safely stored in the refrigerator 3 to 4 days.

If you have bad meat or spoilage, a slimy surface film that you can see or feel on a piece of steak is a tell-tale sign. It’ll be clear or yellowish in color but will make the steak appear shinier than usual. It will also have a slippery or sticky feel when you run your fingers over it.
