Giuseppe “Pino” Luongo (born 1952 or 1953) is an Italian restaurateur, businessman, and memoirist living in the United States. Il Cantinori, Le Madri, Centolire, Coco Pazzo (NY and Chicago), Coco Pazzo Cafe (Chicago), Coco Pazzo Teatro, and Tuscan Square were among his Manhattan eateries. His eateries in New York have all closed. As of June 2012, Morso, a restaurant he helped establish but does not own, is still operating. He was reared in Tuscany’s Porto Santo Stefano area, as one of Antonio and
Mafalda Luongo’s six children, where he learnt to cook from his mother. He enlisted in the Italian military as a “conscientious objector” at the age of 19. He was called up nine years later, for which he blamed his military veteran father, with whom he would stay alienated until the latter’s death. In 1981, he escaped conscription to New York, where he started his career as a busboy at Da Silvano, a renowned Italian restaurant where he would eventually become manager. With two partners, he established his first restaurant, Il Cantinori, on October 23, 1983. Sapore di Mare in Wainscott, Long Island, was his second restaurant, which debuted in 1988. Luongo was given the moniker “Pino Noir” because of his attitude. A Tuscan in the Kitchen, Simply Tuscan, Fish Talking, La Mia Cucina Toscana, and Two Meatballs are among Luongo’s cookbooks, as well as a memoir, Dirty Dishes — A Restaurateur’s Story of Passion, Pain, and Pasta.
