Pilarski received a Facebook message from a casting producer of the Spring Baking Championship show from Food Network saying he would be a perfect contestant for the show. He wanted to be on the show since he had been watching it before. He did a couple of skype interviews and phone calls and after a while, he was ready to film.

Pilarski joined the show during its third season which was hosted by Jesse Palmer the former NFL quarterback. The judges were Nancy Fuller owner of Ginsberg’s Food, model Lorraine Pascale, and Chef Duff Goldman. His favorite challenge on the show was when the contestants had to make a dessert for a Mother’s Day celebration by deconstructing an old dessert.

He was named the Spring Baking Champion of 2017 in an episode that aired on April 9th. On what he planned to do with his money, he said he wanted to buy something for her mother because he had promised so on live television.

Pilarski was a guest judge at Christmas Cookie Challenge in 2017. The show challenges talented and passionate cookie makers during the festive season. Each contestant had to prove their holiday skills in making the best cookies to win a grand prize of $10, 000. He got a chance to be the judge of the show alongside Ree Drummond of The Pioneer Woman.

  • 3 large egg whites
  • 1/8 teaspoon of salt
  • 2 cups unsalted butter at room temperature

  • Place sugar, salt, and egg whites in a bowl over a double boiler and whisk until sugar is dissolved, be careful not to cook the egg whites
  • Place mixture into a bowl fitted with a whisk attachment
  • Whip until stiff peaks form
  • Add butter a few tablespoons at a time letting each addition fully incorporate until adding the next tablespoon
  • If meringue seems soft, chill for 15 minutes before using

When re-whipping swiss buttercream use paddle attachment to deflate all air bubbles in buttercream. This will allow smoother edges. When smoothing out the edges of the cake, heat offset or bowl scraper in order to create a flat surface.
