How to start a sourdough starter

How do you start a sourdough starter?

Stir 1 cup (5 ounces) all-purpose flour and 1/2 cup (4 ounces) room-temperature water into starter until no dry flour remains. Cover and let sit at room temperature for 5 hours. Measure out amount of starter called for in bread recipe and transfer to second bowl.

Can you just bake sourdough starter?

In production baking the starter is primarily kept at room temperature and nourished through a course of feedings that build the starter to the amount needed for baking, with enough left over to feed and begin the process all over again. This system works great if you‘re baking daily and using a lot of starter.

How to Make a More Sour Sourdough
  1. Maintain your starter at a lower hydration level. This means using a higher ratio of flour to water.
  2. Use whole-grain flours, which the acid-producing bacteria love.
  3. Keep the hooch or brown liquid layer that forms on a hungry sourdough starter instead of pouring it off.

You can discard this liquid (or “hooch” as it’s commonly called) or stir it back down into the culture, either way. I typically stir it all in together.

If you want, you can add a little commercial yeast to a starter to “boost” it. Note that starter made with commercial yeast often produces a bread with less distinctive sour flavor than the real thing. Every 24 Hours, Feed the Starter. You should keep the starter in a warm place; 70-80 degrees Farenheit is perfect.

How soon can you use sourdough starter after feeding?

The very short answer is, your sourdough starter generally will be at its peak anything between 4 and 12 hours after feeding. The optimum time to use it will be when there are lots of bubbles at its surface and it has has physically risen to its peak level, just before deflating back down again.

How can I tell if my sourdough starter is ready?

Fill a glass bowl or cup with room-temperature water, and drop a small scoop (a teaspoon or less) of the starter into the water. If it floats, it’s ready to use. If it sinks, your starter will need more time to develop, either with another feeding or simply more time to sit and develop air bubbles.

Do you have to discard sourdough starter every time you feed it?

Yeast is not immortal.” And, even if you avoid the daily or weekly discards and refreshes, you still have to refresh your starter to bring it back to life enough that you can bake bread with it. But there’s good news: You can use that discard in other ways.

How long can sourdough starter sit at room temp?

Allow the starter to rest at room temperature (preferably about 70°F) for 2 to 4 hours, until it shows signs of life; this gives the yeast a chance to warm up and get feeding. Once it’s started to bubble, refrigerate it.

Storing your sourdough starter

A sourdough starter can either be kept at room temperature or in the fridge. If you aren’t intending to use your sourdough starter every day, it is best kept in the fridge.

How long can sourdough starter sit out without feeding?

Yes, after your starter is established (about 10 days after you created it), you can move it from room temperature storage, where you feed it everyday, to the fridge. A starter stored in the fridge can be fed once a week, if you plan to use it often, or you can store it for up to two months without feeding.

What happens if I don’t feed my sourdough starter?

Every once in a while something can go wrong with your starter. If you don’t feed it often enough, the sourdough starter starts to smell like alcohol. You may also find that the starter loses its vibrancy and doesn’t get too bubbly and active after a feeding.

Can you skip a day feeding sourdough starter?

The rule of any kitchen is “When in doubt, throw it out,” but I wouldn’t panic and toss your starter if you only missed 1-3 days of feeding. If it’s more than 3 days AND you have a warm kitchen, you‘ll have to make the call based on how well you know your starter.
