How to prepare dry aged ribeye

Should you marinate dry aged steak?

A good dry–aged steak does not need much. On the contrary, marinades can rather cover the taste of the meat. If you wait another half an hour, the salty film dissolves and the water returns to the steak. The salt, so to speak, reaches its very core.

To fry the perfect dry–age steaks, you should consider the following tricks:
  1. First heat the pan and then let the oil get hot in it, only then comes the steak.
  2. Before stewing, steal the steaks dry.
  3. Always use a panswinder and never a meat fork for turning.
  4. Look at the correct timing for the salt. Best season after roasting.

Do dry aged steaks cook faster?

Dry Aged steaks tend to cook faster than wet-aged steaks because there is less water in them to “bring to a boil.” The steak will cook in much less time, so you’ll want to watch carefully. Use a quick-read thermometer, and pull the steaks off the heat before they reach the desired temperature.

Heat a 10- to 12-inch cast–iron pan over high heat. While the pan is heating, season the steak liberally with salt–like you’d salt a sidewalk in New York in the winter–and then with pepper. When the pan is good and hot–the steak should sizzle aggressively when it touches the pan–brown the steak.

Is dry aged steak worth it?

Dry aging a steak makes it more tender and flavorful. Eat a steak that’s been properly dry–aged and there’s really no competition: It has a richer, beefier flavor, a more tender, more buttery texture, and a minerally, slightly funky scent. Dry–aged beef puts all other steaks to shame.

One consequence is that they will quickly become dry if you overcook them. So we recommend cooking dry–aged steaks no more than medium rare. Wait until just before cooking to season generously with salt. If you apply salt too soon, it will pull moisture out of the meat.
