How to make caster sugar

Can I make my own caster sugar?

You can make your own caster sugar by grinding granulated sugar slightly in a food processor or blender (or a very clean coffee grinder). However you do need to be careful when doing this as it can be easy to end up with a sugar powder instead of finer granules.

What can I use if I don’t have caster sugar?

In most recipes you can substitute granulated sugar for caster sugar and vice versa. However, one cup of granulated sugar does not equal one cup of caster sugar. TIP: Caster sugar can be made at home by processing granulated sugar in a food processor for a few seconds.

Can I use normal sugar instead of caster sugar?

Can I use granulated sugar instead of caster sugar? Yes. While caster sugar and granulated sugar are not exactly the same, they can be swapped 1:1 in baking recipes. Caster sugar is slightly finer and dissolves more easily, but in my experience, this doesn’t affect most baking recipes if swapped with granulated sugar.

How do you make castor sugar from regular sugar?

Is caster sugar the same as white sugar?

White sugar is refined sugar. The caster sugar is much like a powder when compared to white sugar. Caster sugar dissolves more quickly than White sugar because of its fine nature. Caster sugar is also light, which makes it ideal for whipped desserts, sorbets, cakes, custards and cookies.

What is the difference between icing sugar and caster sugar?

Caster sugar is a sugar that is ground to a consistency between granulated and powdered sugar in coarseness while icing sugar is a sugar made by finely grinding granulated sugar until it is a very fine powder.

How do you make caster sugar without a blender?

If you don’t have a blender, a food processor will work too. Depending on the capacity of your machine, you might have to make a bigger batch at one time. Another option is a coffee grinder!

Can I substitute brown sugar for caster sugar?

A: Yes, you can, but you’ll need to melt it first and then incorporate it a bit at a time to the rest of your batter/ingredients until you have the right consistency. Don’t add it all at once as it might make the batter too wet.

Can I use icing sugar instead of caster sugar in meringue?

Any type of sugar can be used to make meringues. The most common are granulated sugar and castor sugar. Icing sugar can also be used, this gives a very “white” result.

What does vinegar do for meringue?

An acid, such as a vinegar, can be added to a meringue mixture to help create a more stable foam when the meringue is mixed. In scientific terms the acid helps to denature, or break down, the coils of amino acids in the egg white’s proteins so that they become long strands instead.

Do you have to put sugar in meringue?

Sugar – Can‘t have a meringue without the sweetness of sugar! Cream of tartar – Meringue’s secret ingredient! It creates a strong, stable meringue. Salt + Vanilla – Flavor, flavor, flavor!

Can I leave meringues in the oven overnight?

The sugar in the meringue pulls moisture from the air. Too much moisture means sticky meringues. Linda Jackson and Jennifer Gardner say the trick is to leave the meringues in the oven after baking. Turn the heat off and let the meringues finish drying, undisturbed, for three hours or even overnight.

Should meringues be chewy inside?

“Just be sure to bake them just until the middle is set and chewy – no more – to get that perfect, nougat-like texture.”

Do meringues harden as they cool?

Meringues are not supposed to harden completely in the oven. While low heat will dry them out, meringues do not become hard and crisp until they have had a chance to cool for five or ten minutes.

Can I open the oven when cooking meringue?

You may have opened the oven door while they were cooking or, if you flavoured the mixture, you could have added too much liquid. Meringues can break because of the sudden change in temperature. To prevent this happening, turn the oven off when the meringues are cooked but leave them inside until completely cool.”

How do you fix runny meringue?

To revive them, beat 1 egg white until frothy, then gently fold into overbeaten whites until they’re shiny and moist again. 5. Humidity and meringue don’t mix, so add 1 tsp. cornstarch to the sugar on humid days.

Can you make meringue on a rainy day?

Some serious bakers swear you can‘t make a meringue on a rainy day. That the moisture in the air will get absorbed by the sugar and the meringue will come out sunken and sticky. Other bakers say the weather makes no difference. Some insist on room-temperature eggs, on fresh eggs, on old eggs — all argued with passion.
