How to cut beef jerky

Do you cut beef jerky with the grain or against the grain?

jerky is always cut against the grain, just like any well prepared steak.

Against the grain:

  1. The knifes blade intersects the natural lines of the meat.
  2. The hard work has already been done before the product is eaten.
  3. Jerky (or steak) cut against the grain is relatively easy to chew.

Which way do you cut meat for beef jerky?

Always cut your jerky strips with the grain. If you‘re not sure which way the grain lays, cut a thin slice of the meat from the piece you‘ve chosen for jerky. Grasp opposite ends of the meat slice and attempt to pull it apart. If it separates easily, your likely cutting “across the grain”.

Why do you cut jerky meat with the grain?

Cutting with the grain creates slices made up of longer, vertical pieces of connected fiber, which results in chewier pieces of meat, as you are chewing multiple, longer lengths of meat fibers. Ultimately it comes back to what you prefer from your jerky.

How thin should I cut meat for jerky?

When you’re actually cutting meat for beef jerky, it’s important to cut it one-fourth-of-an-inch thick, and a meat slicer will help with this. If the jerky is too thick it will be too chewy, and it if it’s too thin, it’ll become too tough.

How thick should I slice beef for jerky?

When it comes to slicing the meat, I recommend slicing it about as thin as possible (1/8 to 1/4-inch thick). And then if you want a chewier jerky (which I weirdly like), slice the meat with the grain. And if you want a more tender jerky, slice the meat against the grain.

Do I need curing salt for jerky?

Raw meat is preserved through the quick drying process of a dehydrator. While salt adds flavor, it’s not necessary to cure the jerky, as it is for curing ham or fish for example.

Does dehydrating meat eliminate bacteria?

The temperatures of dehydrators and oven dehydrating are not high enough to destroy harmful microorganisms that are typically present in raw meat. Even though fully dried jerky may appear done, it is not safe to eat unless it goes through an additional heat treatment. This can be done before or after the meat is dried.

Can you put too much cure in jerky?

Too much cure will make the jerky salty. Letting it cure too long will make it too salty as well. If done correctly, you can cut the cure down by ½ tsp per pound of meat. The meat should still come out pink in the middle when it is finished cooking.

Can you dehydrate jerky too long?

If any moisture squeezes out, it’s definitely not done yet and can go back into the dehydrator. If it breaks and breaks, you‘ve left it too long, and it’s already past the point of best flavor and texture. It’s still perfectly edible, just not as good as it might have been.

Do you flip jerky in a dehydrator?

You would have to constantly rotate and flip the jerky to dry completely. The drying rack allows air flow on each side during the complete drying process.

Can you overcook jerky in a dehydrator?

After these procedures have been done, the actual drying process begins. Old-fashioned ways of drying include using the sun’s heat or air to dehydrate the meat. Today, using dehydrators or ovens are recommended safe drying methods and are ideal to sufficiently heat and dry the meat strips without overcooking them.

How do you soften hard jerky?

Place the jerky in an airtight container with a moist vegetable such as a carrot or a stick of celery overnight. Just as a slice of bread softens brown sugar by transferring its moisture slowly, the vegetable will help soften the jerky.

How do you fix bland jerky?

I would recommend coating your cooked jerky lightly with olive oil and then sprinkling with dry rub or seasoning of your choice. The oil will help the rub stick and will still keep your jerky from going bad. Continue to store jerky in an airtight container or zip lock bag.

Why is my jerky tough?

After the pieces come out of the dehydrator and have a chance to equilibrate, the moisture from the center will move out to the surface, and if there is enough moisture it can mold. Or if you store it where it continues to air dry, it will get hard like you described or crumbly if cut across the grain.

What do I do if my beef jerky is too dry?

Why is store bought jerky soft?

It could be a different cut of meat, it could be tenderized after the slicing process, or it could be dried so it has more moisture left in it to make it more tenderor a combination of any of these things!

What is the best temp to make jerky?

The jerky should be dried at a uniform temperature of 130 degrees F (55 degrees C) to 140 °F (60 degrees C) to ensure the process is fast enough to dry the food quickly before it spoils. The heating and air flow must remove enough water that microorganisms are unable to grow.

Why is jerky so expensive?

One of the main reasons the beef jerky costs so much is water. Beef is approximately 60% water, so once the meat is dehydrated or smoked, the weight of the remaining meat is drastically less than what you started with.

Why is Jack Links jerky so soft?

The sugar will help bind with the water and meat, allowing the jerky to stay more moist while still having a low water activity typical for jerky.

Can you marinate jerky too long?

As long as you do it right, nothing will ever go wrong with the taste of the meat. In any jerky, regardless of the meat choice, the ideal marination time is 12 hours to one day. It is not good if you just marinate the meat for four to six hours as it will not take in the full flavor of your seasonings.
