You can sell him all normal soul shards for 500; therefore, feeding Frampt Soul of a Lost Undead and Large Soul of a Lost Undead (worth 200 and 400 souls respectively) is more beneficial than consuming them directly.
Are Frampt and Kaathe evil?
Frampt isn’t outright evil. He is ambiguously good, he is grooming you in order to succeed to Lord Gwyn and prolong the Age of Fire, a distorted cycle but the alternative is much worse as Kaathe attempts to start the Age of Dark, only ended up as creating destructive abominations like the Four Kings and Manus.

You can skip it. I don’t advise it, however. You may acclimate more slowly because of the change in interfaces and controls. Also, Dark Souls 2 was pretty good.
