Numbers are approximate guidelines. On average, as a very rough guideline, expect to need about 1 ¼ kg (3 lbs) of beets per 1 litre (US quart) jar of canned beets. 10 medium ( 9 cm / 3 inches) raw beets, skin on = 2 kg (4 ½ pounds).

A bushel of beets weighs between 50-58 pounds. A bushel will yield roughly 36-40 pints of pickled beets.

A peck is also a measure of dry volume and is smaller than a bushel. To be specific, it is a quarter of the volume of a bushel. So seeing as a bushel is 32 dry quarts, a peck is 8 dry quarts.

Pressure Canning Beets

Beets are a low acid vegetable, and they cannot be canned in a water bath canner. At least so long as you’re canning plain beets. If you don’t have a pressure canner, try making pickled beets instead, which are canned in a salty vinegar brine.

When your beets are cool enough to handle, peel off the skins (they should slide right off). Then, cut off the rest of the tops and the roots. Slice or chop the beets up; then, spread them out on a cookie sheet, and flash freeze them. This will prevent the beets from freezing together in clumps.

Leave small (1-inch) beets whole, if desired. Pack the beets into freezer containers or heavy-duty freezer bags, label with the name and date, and freeze for up to 8 months.
