Delia Smith Career
At 21, Delia started working in a small restaurant in Paddington, she washed dishes before moving on to waitressing and she was eventually allowed to help with the cooking. She started reading English cookery books in the Reading Room at the British Museum, trying out the recipes on a Harley Street family with whom she was living. Her next job was at Carlton Studios in London, where she prepared food for studio photography.
In 1969 she was taken on as the cookery writer for the Daily Mirror’s newly-launched magazine. The deputy editor was Michael Wynn-Jones, whom she later married. Her first piece featured kipper pâté, beef in beer and cheesecake. She baked the cake which was used on the cover of The Rolling Stones’ album Let It Bleed. In 1972 Delia started a column in the Evening Standard. She later defected to the rival Evening News, but she returned to the Standard when that newspaper bought out the News. She wrote for both for 12 years; later she wrote a column for the Radio Times until 1986.
Her first television appearance was in the early 1970s, as a resident cook on BBC East’s regional magazine program Look East, shown on BBC One across East Anglia. After this, she was offered her own cookery television show, Family Fare which ran between 1973 and 1975. Delia became a recognizable figure amongst young people in the 1970s and early 1980s when she was an occasional guest on the BBC’s Saturday morning children’s program Multicoloured Swap Shop, giving basic cooking demonstrations. Her 1995 book Delia Smith’s The Winter Collection sold 2 million copies in hardback, becoming the fifth biggest-selling book of the 1990s.
In 2003 she announced her retirement from television. She, however, returned for an eponymous six-part series airing on the BBC in Spring 2008. The accompanying book, an update of her 1971 best-seller How to Cheat at Cooking, was published in February 2008, again becoming a best-seller.
It was later noted that Delia`s television series Delia’s How to Cook led to a 10% rise in egg sales in Britain and her use of ingredients such as frozen mash and tinned minced beef and onions, or utensils such as an omelet pan, could cause sell-outs overnight. This phenomenon, dubbed the “Delia effect”, was most recently seen in 2008, after her book How to Cheat at Cooking was published. Her fame has meant that her first name has become sufficient to identify her to the public and the “Delia effect” has become a commonly used phrase to describe a run on a previously poor-selling product as a result of a high-profile recommendation.

METHOD
All you do is sift the flour, baking powder and bicarbonate of soda into a roomy mixing bowl, lifting the sieve quite high to give the flour a good airing as it goes down.
Then simply add all the other ingredients, except the stout. Now, using an electric hand whisk, combine them for about one minute until you have a smooth creamy consistency. Finally stir in the stout, a little at a time, until it’s all incorporated. Next, divide the mixture between the two prepared tins and bake near the center of the oven for about 30–35 minutes.
They are cooked when you press lightly with your little finger and the center springs back. Then remove them from the oven and after about 30 seconds loosen the edges by sliding a palette knife all round then turn them out onto a wire cooling tray. Carefully peel back the lining by gently pulling it back. Now lightly place the other cooling tray on top and just flip them over so that the tops are facing upwards (this is to prevent them from sticking to the cooling tray).
To make the icing: melt the broken chocolate with the stout in a bowl set over a pan containing 5cm of barely simmering water, without the bowl touching the water. When it’s melted (5–10 minutes) take it off the heat. Beat in the butter and leave it to cool a little before beating in the icing sugar with an electric hand whisk.
Now transfer a third of the icing to a separate bowl and stir the chopped walnuts into that. After the icings have cooled to a spreadable consistency, sandwich the cake with the walnut icing, then spread the remaining two-thirds of the icing on the top of the cake, using a palette knife.
Finally decorate with a circle of walnut halves. Leave the icing to set completely before storing in an airtight tin.

Delia Smith Pancake Recipe
Ingredients
For the pancake mixture
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
To serve
caster sugar
lemon juice
lemon wedges
Recipe tips
Method
Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets an airing. Now make a well in the center of the flour and break the eggs into it. Then begin whisking the eggs – any sort of whisk or even a fork will do – incorporating any bits of flour from around the edge of the bowl as you do so.
Next, gradually add small quantities of the milk and water mixture, still whisking (don’t worry about any lumps as they will eventually disappear as you whisk). When all the liquid has been added, use a rubber spatula to scrape any elusive bits of flour from around the edge into the center, then whisk once more until the batter is smooth, with the consistency of thin cream. Now melt the 50g/2oz of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then pour the rest into a bowl and use it to lubricate the pan, using a wodge of kitchen paper to smear it round before you make each pancake.
Now get the pan really hot, then turn the heat down to medium and, to start with, do a test pancake to see if you’re using the correct amount of batter. I find 2 tbsp is about right for an 18cm/7in pan. It’s also helpful if you spoon the batter into a ladle so it can be poured into the hot pan in one go. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it’s tinged gold as it should be. Flip the pancake over with a pan slice or palette knife – the other side will need a few seconds only – then simply slide it out of the pan onto a plate.
Stack the pancakes as you make them between sheets of greaseproof paper on a plate fitted over simmering water, to keep them warm while you make the rest.
To serve, sprinkle each pancake with freshly squeezed lemon juice and caster sugar, fold in half, then in half again to form triangles, or else simply roll them up. Serve sprinkled with a little more sugar and lemon juice and extra sections of lemon.
Delia uses an 18cm/7in pan to make her pancakes. If you use a larger pan you will have fewer pancakes.
